Dejah's Oven-Fried Chicken

This is the first recipe for oven-fried chicken that I’ve ever tried that worked for me. Nicely crisp coating and very moist and tender. How long this will take to cook will depend on what cut of chicken you are making. Boneless breasts will take 30 or more minutes. Bone-in thighs will take 40-50 minutes. I used chicken tenders and they were cooked through in 15-20 minutes. BUT they weren’t GBD (Golden Brown & Delicious). I just cranked up the broiler and let them brown on either side for a couple of minutes and they were perfect.
List of Ingredients
4 boneless, skinless chicken breasts or 4 whole legs or 1 1/2 lb. chicken tenders
1/2 cup mayonnaise
1/3 cup grated Parmesan cheese
1 t. salt
1/2 t. pepper
Panko bread crumbs (maybe a cup?)
Recipe
Heat the oven to 425 degrees. Line a baking sheet with non-stick foil. Mix together the mayonnaise, cheese, salt and pepper. Coat the chicken with this mixture. Dredge in the panko. Place the chicken on the baking sheet and bake until done, turning the chicken pieces over halfway through.
Serves 4.
