    Recipe Introduction


    These are very good and very quick to make – low fat, too!


    List of Ingredients


    • 2 T. honey
    • 2 T. coarse grainy mustard
    • 1 T. tarragon whine vinegar
    • 2 t. Dijon mustard
    • ½ c. plain dry bread crumbs
    • ½ t. tarragon, crumbled
    • ½ t. salt
    • ½ t. freshly ground black pepper
    • 4 skinless, boneless chicken breast halves (4 oz. each)
    • 2 t. olive oil


    Instructions


    1. In a large shallow bowl, combine the honey, grainy mustard, wine vinegar and Dijon mustard. Stir to blend.
    2. On a flat plate, combine the breadcrumbs, tarragon, salt and pepper.
    3. Dip the chicken in the mustard mixture to coat completely. Then dredge in the seasoned breadcrumbs.
    4. In a large nonstick skillet, heat the oil over medium heat. Add the chicken and cook, turning once, until golden brown outside and white throughout but still juicy, 5 – 7 minutes.


    Final Comments


    Serves 4.
