Deviled Chicken Breasts

Recipe Introduction
These are very good and very quick to make – low fat, too!
List of Ingredients
- 2 T. honey
- 2 T. coarse grainy mustard
- 1 T. tarragon whine vinegar
- 2 t. Dijon mustard
- ½ c. plain dry bread crumbs
- ½ t. tarragon, crumbled
- ½ t. salt
- ½ t. freshly ground black pepper
- 4 skinless, boneless chicken breast halves (4 oz. each)
- 2 t. olive oil
Instructions
- In a large shallow bowl, combine the honey, grainy mustard, wine vinegar and Dijon mustard. Stir to blend.
- On a flat plate, combine the breadcrumbs, tarragon, salt and pepper.
- Dip the chicken in the mustard mixture to coat completely. Then dredge in the seasoned breadcrumbs.
- In a large nonstick skillet, heat the oil over medium heat. Add the chicken and cook, turning once, until golden brown outside and white throughout but still juicy, 5 – 7 minutes.
