    Easy Chicken Ramen Stir Fry

    This is an easy, fast and surprisingly good weeknight meal. With a little advance work the night before, this meal comes together in about 20 minutes. I did this with chicken, but there is no reason that you couldn't also do it with beef. You could also add any vegetables you like - green onions, peas, snow peas or brocolli would be good.

    List of Ingredients

    8 oz. boneless chicken pieces (white or dark), cut into bite sized pieces
    Soy Vay Veri-Very Teriyaki sauce
    1 package Ramen noodles - Oriental flavor
    Optional vegetables, par cooked
    Vegetable oil
    Cashews
    Crispy Rice noodles

    Recipe

    Place the chicken pieces in a ziplock bag and pour in some of the Soy Vay sauce. Mix, close and refrigerate at least 6 hours (overnight is good).

    Heat a couple of tablespoons of the oil in a skillet over medium high heat heat. Take the chicken out of the sauce (discard the sauce) and stir fry until almost done. Meanwhile cook the Ramen noodles for about 2 1/2 minutes, drain and add about 1/2 of the flavor packet. Set aside, stirring occasionally. Now is the time to add the vegetables and a little bit more of the Soy Vay. When everything is almost done, add the noodles and stir fry until hot. Served garnished with nuts and crispy rice noodles.

    Serves 2
