Grilled Chicken with Creamy Caper Sauce

I watch Sandra Lee for comedy, not recipes. I just happen to love her particular kind of crazy. But I watched her make this dish the other day and it looked and sounded really good. The only packaged item was the lemon pepper seasoning and I like that. It turned out pretty good. Mike liked it better than I did – but I liked it, too. Taste before adding any salt! The capers added enough salt for me. Our grill is on the fritz, so I just pan sautéed the chicken. It worked just fine
List of Ingredients
4 chicken thin boneless skinless chicken breast cutlets
2 teaspoons lemon pepper seasoning
3 tablespoons olive oil
1 shallot, diced
1 tablespoon chopped garlic
2 tablespoons capers [slightly chopped]
1 cup white wine or chicken stock
1 tablespoon Dijon mustard
2 tablespoons freshly chopped parsley leaves
2 tablespoons sour cream
Recipe
Heat a grill to medium-medium-high heat. Season the chicken with lemon pepper on both sides and put on the grill. Grill for 4 to 5 minutes on each side, or until done.
Heat the olive oil in a medium sauté pan over medium heat. Add the shallot and garlic and saute for about 2 minutes. Add the capers and white wine and reduce by half. Whisk in the mustard and the parsley and taste to adjust seasoning, add salt and pepper, as needed. Let simmer for 1 minute, then remove from heat and whisk in the sour cream.
Serve the chicken topped with the sauce.
Yield: 4 servings
