Recipe Introduction
Cringe-worthy name for really, really good chicken. This dish is just about the easiest thing I’ve ever cooked and gives back HUGE value and taste for a tiny little effort. Tender and moist and deeply flavorful. The recipe calls for boneless, skinless chicken thighs, but I had breasts so that’s what I used and it was still moist. If you do use the boneless, skinless breasts buy 3 and cut them in half.
List of Ingredients
1 1/2 lb. boneless, skinless chicken thighs (should be 6 of them)
1/2 c. Dijon mustard
1/4 c. maple syrup
1 T. rice wine vinegar
Salt and pepper
Fresh rosemary, minced fine
Recipe
Preheat the oven to 450 degrees.
Season the chicken pieces with salt and pepper on both sides and place in a baking dish. In a small bowl, mix the mustard, syrup and vinegar and pour over the chicken. Turn to coat. Place in oven and bake until meat thermometer reads 160-165 degrees, about 40 minutes. Baste half way through. (NOTE: Breasts will take less amount of time – maybe 30 minutes). Remove from oven and let rest 5 minutes. Plate the chicken – spooning some sauce over each serving and sprinkle with rosemary.
Serves 3-4.
