    Poached Chicken and Stock for Recipes

    This is what I do when I need chicken and stock for a recipe like chicken and dumplings or chicken pot pie. It is not terribly exact, but you can adjust it to your tastes.


    List of Ingredients


    • One whole chicken or chicken breasts – about 3 lb.
    • Best quality, low salt chicken broth (enough to cover chicken)
    • Salt and pepper, to taste
    • Poultry seasoning, to taste
    • 1 onion, cut in half – no need to peel
    • 2 carrots, washed and cut in half
    • 2 large celery stalks, washed and cut in half


    Instructions


    1. Put everything into a large stock pot. Bring to a boil and simmer, covered until the chicken is tender. Take chicken out and cool. Shred or cut into size pieces that you need.
    2. Strain stock and degrease.
