Poached Chicken and Stock for Recipes

Recipe Introduction
This is what I do when I need chicken and stock for a recipe like chicken and dumplings or chicken pot pie. It is not terribly exact, but you can adjust it to your tastes.
List of Ingredients
- One whole chicken or chicken breasts – about 3 lb.
- Best quality, low salt chicken broth (enough to cover chicken)
- Salt and pepper, to taste
- Poultry seasoning, to taste
- 1 onion, cut in half – no need to peel
- 2 carrots, washed and cut in half
- 2 large celery stalks, washed and cut in half
Instructions
- Put everything into a large stock pot. Bring to a boil and simmer, covered until the chicken is tender. Take chicken out and cool. Shred or cut into size pieces that you need.
- Strain stock and degrease.
