Roast Game Hens with Pineapple Glaze

This is SO good with pilaf or couscous.
List of Ingredients
- 2 cornish game hens
- 2 T. butter, melted
- 1 - 8 oz. can crushed pineapple, drained
- 1/2 c. maple syrup
- 1/4 c. lemon juice
- 3 T. dijon mustard
- 1 T. soy sauce
- chopped fresh parsley
Instructions
- Preheat oven to 350 degrees.
- Arrange hens, breast side up, in a 13x9 pan. Brush hens with butter and salt and pepper. Bake, uncovered, 25 minutes.
- Meanwhile, mix next five ingredients in sauce pan. Baste hens with some of the sauce. Continue roasting hens until they reach 180 degrees, basting occasionally - about 45 minutes.
- Transfer hens to a platter and tent with foil to keep warm. Defat pan juices and add to pineapple mix, scraping up bits from the bottom of the pan. Bring to a boil. Reduce heat to medium and simmer until sauce is reduced to 2/3 cup, stirring occasionally, about 8 minutes. Sprinkle hens with parsley and serve with sauce.
