    Roast Game Hens with Pineapple Glaze

    This is SO good with pilaf or couscous.


    List of Ingredients


    • 2 cornish game hens
    • 2 T. butter, melted
    • 1 - 8 oz. can crushed pineapple, drained
    • 1/2 c. maple syrup
    • 1/4 c. lemon juice
    • 3 T. dijon mustard
    • 1 T. soy sauce
    • chopped fresh parsley


    Instructions


    1. Preheat oven to 350 degrees.
    2. Arrange hens, breast side up, in a 13x9 pan. Brush hens with butter and salt and pepper. Bake, uncovered, 25 minutes.
    3. Meanwhile, mix next five ingredients in sauce pan. Baste hens with some of the sauce. Continue roasting hens until they reach 180 degrees, basting occasionally - about 45 minutes.

    4. Transfer hens to a platter and tent with foil to keep warm. Defat pan juices and add to pineapple mix, scraping up bits from the bottom of the pan. Bring to a boil. Reduce heat to medium and simmer until sauce is reduced to 2/3 cup, stirring occasionally, about 8 minutes. Sprinkle hens with parsley and serve with sauce.
