Sesame Chicken Salad

List of Ingredients
- ¼ c. rice vinegar
- ¼ c. low sodium soy sauce
- 2 T. creamy peanut butter
- 1 t. dark sesame oil
- 1 t. bottled minced fresh ginger
- 1 t. bottled minced garlic
- 2-½ c. chopped cooked chicken breast
- 2 c. thinly sliced Napa cabbage
- 1 c. red bell pepper strips
- 1 c. fresh bean sprouts
- 1 c. grated carrot
- 2 T. chopped green onions
- 1 t. toasted sesame seeds
Instructions
- To prepare vinaigrette, combine first 6 ingredients, stirring with a whisk.
- To prepare salad, combine chicken and next 5 ingredients (through onions) in a large bowl. Drizzle with vinaigrette, tossing gently to coat. Sprinkle with sesame seeds.
Final Comments
Serve 4.
