    I have had this in my "to try" file forever and just decided to try it. Really fast, easy and very good. Serve it with rice or orzo (my choice) to soak up the good sauce. I also served Almond-Orange-Apricot Crescent Rolls and they were a good match with this.

    List of Ingredients




    6 skinned and boned chicken breast halves
    1/8 t. salt
    1/8 t. pepper
    3 T. butter, divided
    1 1/2 c. whipping cream
    3 T. orange marmalade
    2 T. Dijon mustard
    1/4 t. Cayenne pepper
    1 (2.25 oz.) package sliced almonds, toasted

    Recipe



    Flatten chicken breast halves to palliards and season with salt and pepper. Sauté half the chicken in 1 1/2 T. butter in a large skillet over medium-high heat, about 2 minutes on each side, or until golden. Remove from skillet and repeat with rest of chicken and butter.

    Reduce heat to medium-low; add whipping cream and next 3 ingredients to skillet, stirring well. Add chicken, sprinkle with almonds, and cook 8 minutes or until sauce thickens.

    Serves 6.
