Recipe Introduction
Delicious and easy muffins. I usually have all of these ingredients on hand, so I can make these muffins anytime. Served warm, while the chocolate chips are still melty, they are amazingly good. I added 1 t. vanilla and used most of a 12 oz. bag of Ghirardelli chocolate chips (not minis), sprinkling some on top. I think that an addition of some demera sugar to the top of the muffins before baking would be pretty, too. My own notes are in brackets [].
List of Ingredients
1 c. Miracle Whip
1 c. sugar
[1 t. vanilla]
2 lg. ripe bananas, mashed
2 c. flour
2 t. baking soda
½ c. mini semi-sweet chocolate chips [I used almost 12 oz. regular]
Recipe
Preheat oven to 350 degrees. Prepare muffin tins.
Mix Miracle Whip and sugar [adding vanilla], then add bananas. Combine flour, baking soda and chips. Add dry mix to wet and mix just until moistened. Spoon batter into muffin tin, filling cups 2/3 full [my medium sized scooper].
Bake for 15 – 18 minutes.
Makes 22 muffins.
