Recipe Introduction
Jo made this when we had dinner with her one night. Very simple and easy to put together, it is also delicious! According to the poster of the recipe, crazycookinmama, you can also use 2 eggs and reduce the sugar to 1/3 cup. I liked the taste and texture a lot, so I probably will leave as is. And even though the recipe doesnt call for it, I ALWAYS heat the baking pan in the oven while it is heating up.

1 cup milk
1⁄4 cup butter (or bacon grease) plus more for pan
1 large egg
1 1⁄4 cups yellow cornmeal
1 cup all-purpose flour
1⁄2 cup sugar
1 tablespoon baking powder
1⁄2 teaspoon salt
Recipe
Heat the oven to 400 degrees. Grease a 9-inch cast iron skillet or a 8x8-inch pan with shortening or bacon grease.
Whisk the milk, butter (or bacon grease) and egg in a large bowl. Mix the dry ingredients and add to the wet all at once, stirring just until moistened. The batter will be lumpy.
Pour into pan and bake for 20-25 minutes.
Serves 8-10.
