Recipe Introduction


Easy to do and they save well – just toast them to crisp leftover waffles. I like a sweeter cornbread, so I add a 3 packages of sugar-free sweetener.

1 pkg “JIFFY” Corn Muffin Mix
1 egg
2 Tbsp. shortening, melted [I use bacon grease]
1/2 cup milk

Preheat the waffle iron on medium. Brush very lightly with oil. Combine ingreients and let sit for 5 minutes. Bake on waffle iron as directed in the instruction manual.

Made 4 round waffles.
