    Recipe Introduction


    My MIL, Jo, made these for us for breakfast. They are delicious and moist and as good day two as they are fresh. Jo says that you can make these your own with substitutions – different fruits, nuts, etc.

    List of Ingredients




    1 c. Splenda
    2 c. flour
    1 t. baking powder
    1/2 t. baking soda
    1/2 t. salt
    1 t. cinnamon
    1/2 c. walnuts
    1/2 c. blueberries
    1 c. fresh cranberries
    1 T. grated orange zest
    1/4 c. oil
    1 egg
    3/4 c. orange juice
    Turbanado sugar

    Recipe



    Heat oven to 400 degrees.

    Spray a 12 cup regular muffin tin with cooking spray – or fill cups with liners.

    In a bowl, combine the first 6 ingredients. Mix in the nuts and fruits.

    In a small bowl, whisk the egg, oil and orange juice. Add to the flour mixture all at once and stir until moistened. Do not overmix. Scoop into the muffin tin. Sprinkle tops with the turbanado sugar. Bake for 15 to 20 minutes until done.

    Makes 12 muffins.
