Pikelets (Australian Pancakes)

Captain on eGullet made these and they looked so good I had to try them. He kindly gave the recipe. We loved them. They are a little heartier than regular fluffy American pancakes with a LOT of flavor. Mike thinks they are the best pancakes I’ve ever made and ate the leftovers without syrup. I didn’t think of it, but next time I’ll try these with some Golden Syrup. I don’t know if it is usual, but I let the mixed batter sit for a few minutes to thicken up.
List of Ingredients
1 c. self-rising flour
1 T. baking powder
1 c. milk
1 egg
A generous tablespoon caster sugar (I just used regular)
Pinch of salt
Dash of vanilla
Recipe
Mix dry. Mix wet. Pour wet into dry and mix JUST until it comes together. Let sit while the griddle heats up to 375F. Cook as you do pancakes.
Makes 5-6 Six-inch cakes.
