Mike requested apple fritters yesterday and the first recipe that Google came up with was this one. Since everything that I’ve ever made of hers has been wonderful, I decided to try them. They were fantastic and very easy. What a great fall snack. I ended up with some leftover diced apple, so I simmered them in apple cider and added some maple syrup. I topped the hot fritters with this and served them alongside sausage and eggs for a wonderful autumn breakfast.
In a mixing bowl, combine flour, sugar, baking powder, cinnamon, and salt. In a separate bowl, beat the eggs with a fork, and then add milk, melted butter, and vanilla.
Mix the wet ingredients into the dry very gently, being careful not to over mix. Fold in the apples. You want a very chunky batter – you may need less than two whole apples, though.
In a deep pan, over medium heat bring 2 inches of oil to a temperature of about 350 – 360 degrees. This is your target temperature. You may have to adjust the heat to keep the oil temperature correct.
Preheat the oven to 250 degrees.
Using a 1 – 1 1/2 T. scoop, drop batter into the oil, a few at a time – do not crowd. As they start to float and brown, turn them over, if necessary (they sometimes do this on their own). They should cook about 2 – 2 1/2 minutes.
When done, remove from the oil and drain. Place them in the oven on a cooky pan with a rack in it while you are frying the rest of the fritters. When done and ready to serve dust generously with powdered sugar.
Serve IMMEDIATELY!
NOTE: If you want to make these ahead, just fry them and drain. Do not dust with powdered sugar. When you are ready to serve them, heat in a 350 degree oven for 8 minutes and then dust with sugar just before serving.
