Skip's Buttermilk Pancakes

Skip at cookskorner.com made these and recommended them. They are wonderful. I made them on our annual trip to the Outer Banks in March 2009. I mixed up all the dry ingredients in a plastic bag at home and took it with us to the beach. I was NOT working under optimum conditions - someone else's kitchen, unfamiliar equipment, etc. and they turned out delicious. Even lighter and fluffier than my Feather Pancakes. I think that these are our new 'go to' pancakes.
List of Ingredients
1 egg
1 cup buttermilk
1/2 tsp baking soda
1 cup plain flour
1 TBS sugar
1 TBS cooking oil
1 1/2 tsp baking powder
1/2 tsp salt
More oil and butter for cooking
Recipe
Beat the egg and add in the buttermilk and baking soda. Stir in the 1 T. oil. Mix the flour, sugar, baking powder and salt and stir into the buttermilk mixture. Get rid of any large lumps, but don't overmix. Let sit while you heat up the pan.
Heat a griddle or frying pan with a little oil and butter at medium low/medium. Cook the size pancakes you want, turning when the edges set and bubbles are coming up through the batter. Add small amounts of additional butter and oil as you go, as needed. Keep pancakes in a warm oven while cooking the rest.
This made about six 6-inch pancakes.
