    Southern Buttermilk Biscuits

    List of Ingredients


    • 2 c. Southern-style flour, plus more, as needed
    • 1/4 t. baking soda
    • 1 T. baking powder
    • 1 t. salt
    • 6 T. lard or veg. shortening, chilled
    • 3/4 c. lowfat buttermilk


    Instructions


    1. Sift the dry ingredients into a roomy bowl. Cut in the shortening with a pastry blender or a fork until the mixture has the texture of coarse meal. Add the buttermilk and mix with your hand or a spoon, lightly, but thoroughly. Add a little more flour if the dough is too sticky. Knead for 1 minute. Wrap in plastic and refrigerate until well chilled, at least 20 minutes.

    2. Preheat the oven to 450 degrees. Roll the dough out ½ inch thick on a lightly floured board. Always roll from the center out for tender, crisp biscuits. Cut the dough into the desired sized biscuits.

    3. Place the biscuits on a baking sheet and bake until golden brown, 10-12 minutes.



    Final Comments


    Makes 20 – 30 biscuits.

    I line my baking sheets with parchment paper and brush the tops of my biscuits with bacon grease before baking.
