Strawberry Cream Cheese Biscuits

These are really easy and really good. I used low fat cream cheese and Bisquick and sugarless preserves. I can think of about a million variations of these: sweet and savory! It would be good to cook them without the cream cheese mixture and use that as a sort of frosting; that way, you could make really low fat, low sugar sweet rolls. I think that they might be improved by rolling the biscuits much thinner, cutting twice as many and putting the cream cheese mixture BETWEEN the layers.
List of Ingredients
- 3 c. Original Bisquick baking mix
- 2 t. grated orange peel
- ¾ c. orange juice
- 1 pkg. (3 oz.) cream cheese, softened
- 2 T. strawberry preserves
- sugar, if desired
Instructions
- Preheat oven to 450 degrees.
- Stir together Bisquick, orange peel and orange juice until soft dough forms; beat vigorously for 30 seconds.
- Place dough on surface sprinkled with Bisquick; roll to coat and knead 10 times. Roll 1/2 “ thick. Cut with 2 ½” round cutter dipped in Bisquick. Place on ungreased cooky sheet (I always use parchment paper).
- Stir together cream cheese and preserves. Spoon about 1 t. cream cheese mixture onto center of each dough circle. Sprinkle with sugar. Bake 8 – 10 minutes or until golden brown.
- Serve warm.
Final Comments
Makes 15 biscuits.
