    Strawberry Muffins

    Recipe Introduction


    These muffins have a lovely delicate texture and flavor and are very easy to make. They are neither too cakelike, nor too bready. I did find that they were not quite sweet enough for my American taste buds, so I topped them with a confectioner’s sugar glaze.

    List of Ingredients




    8 oz. cake flour, sifted
    2 tsp. baking powder
    3 oz. white sugar
    1 tsp. kosher salt
    4 oz. whole egg
    6 oz. whole milk
    4 oz. butter, melted
    3 drops of strawberry extract
    2 oz. strawberry jam

    Recipe



    Heat oven to 350 degrees. Spray a muffin tin with cooking spray.

    Mix the dry ingredients. In another bowl mix the wet ingredients, except for the jam. Mix the dry ingredients into the wet ingredients just until they come together, being careful not to overmix. Stir up the jam to loosen it and stir into the batter. Pour into muffin tin. Bake for about 15 minutes. Immediately remove from pan and cool on rack.

    Makes 12 muffins.
