Thick & Fluffy Buttermilk Pancakes

I’ve been looking for THE pancakes for a LONG time. I like them thick and fluffy and light. I’ve taste a lot of really good pancakes - my favorites being Skip’s Buttermilk Pancakes and Feather Pancakes – but these are my new favorites. There are really minor differences between all three of these recipes, but for me, these work best. This is originally a BH&G recipe, but it traveled through a lot of sites before I found it at realmomkitchen.com.
List of Ingredients
2 cups all purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups well shaken buttermilk
2 large eggs
1/4 cup vegetable oil Recipe
Mix the dry ingredients in a bowl. In another bowl mix the wet ingredients. Add the wet to the dry and fold together until just combined. Do NOT overmix – you will have some lumps.
Lightly oil a skillet (I use either a griddle or 2 skillets) and bring the temperature to 350-375 degrees (an infrared thermometer is wonderful here, but on my electric stove I kept it at between 4 and 5 most of the time).
Drop 1/4 c. of batter into the skillet/griddle. Spread slightly with the back of a spoon. Cook until bubbles begin to form on the top and the underside is golden brown, then flip and cook until done on the other side.
Makes 10-12 pancakes.
