Epicurean Wild Rice

Recipe Introduction
Great side dish. We love wild rice and this is all wild rice - not mixed with white. Good with duck.
List of Ingredients
- 1/3 c. butter
- 1/2 c. snipped parsley
- 1/2 c. chopped green onions
- 1 c. chopped celery
- 1 1/4 c. wild rice
- 1 - 10 1/2 oz. can condensed consomme, undiluted
- 1 1/2 c. boiling water
- 1 t. salt
- 1/2 t. dried marjoram
- 1/2 c. sherry
Instructions
- In dutch oven or heavy skillet with tight fitting cover, melt butter; add parsley, onions and celery. Saute until soft but not brown. Add rice, consomme, water, salt and marjoram. Cook, covered, over low heat, for about 45 minutes, stirring occasionally with a fork. Add a little hot water if mixture becomes dry and starts to stick. When rice is tender and all liquid has been absorbed, stir in sherry. Cook, uncovered, about 5 minutes or until sherry is absorbed, stirring occasionally.
