Long Grain & Wild Rice w/ Cranberries

Recipe Introduction
This is a delicious and easy side dish that goes perfectly with lamb or chicken. I made it for Valentine’s day 2012 and paired it with a rack of lamb.
List of Ingredients
1/2 c. dried cranberries
1 1/4 c. water
1 c. fresh orange juice
1 T. sweet butter
1 (8-oz.) package long-grain and wild rice
Zest of 1 orange
1/2 c. sliced almonds, toasted
Recipe
Cover the cranberries with hot water and let sit while you prepare the rice.
In a medium pot place the water, orange juice and butter. Bring to a boil over medium-high heat. Add the rice and seasoning envelope. Stir and return to a boil. Reduce heat, cover and simmer for 20-25 minutes – until the rice is tender. Drain the cranberries and add them to the rice. Add in the orange zest and the almonds, tossing to mix.
Serves 4.
