    This is not really pilaf, but it is an easy and tasty substitute for it. For years, I’ve cooked rice ‘backwards’ – meaning I sauté the rice in oil until it is nicely toasted THEN add the water.

    List of Ingredients




    3 cups water
    2 cups Basmati rice
    1 T. oil
    1 large onion, minced
    1 container of Knorr Vegetable Stock Concentrate (they come in packages of 4)

    Recipe



    In a large sauce pan heat the oil over medium heat. Sauté the onion until browned. Place the onion on a paper towel lined plate and set aside. Add a little oil to the pan and sauté the rice until it is toasted and fragrant. Add the water and bring to a boil. Cover and reduce the heat until it is barely simmering. Simmer for about 15 minutes – the rice should be almost tender and the water should be almost absorbed. Take the pot off the heat, place a folded tea towel under the lid and let sit for another 5 minutes. Toss the rice with the onion, taste and add salt and pepper, if needed. Serve immediately.

    Serves 8
