Pickled Peaches or Pears

Recipe Introduction
These are scrumptious! I made the peaches. This is not quite peach season, so I used 2 bags of frozen peaches and they were delicious! Use a large jar – about a quart.
List of Ingredients
6 pears or peaches (peeled and cored – peaches: cut in half, pears: quartered)
1 c. white vinegar
1 c. sugar
1 lemon, rind only
1 small stick cinnamon
6 cloves
4 small pieces of root ginger
Recipe
Keep prepared fruit in bowl of water with a squeeze of lemon juice to prevent discoloration.
Put spices, vinegar and sugar into a pan, bring to a boil and simmer. Add fruit and cook gently for 2 – 5 minutes until fruit is just tender.
Remove fruit carefully and put into warm jars. Bring syrupy vinegar to the boil and pour over fruit making sure the fruit is covered. Put on a screw top lid, label and store in a cool dark place. Best kept for at least a week and will keep for up to 6 months, improving flavor all the time.
