    Jessica makes these regularly and they are delicious on tacos and sandwiches and salads and just about any savory thing you can think of!

    List of Ingredients

    1 cup apple cider vinegar
    1 tablespoon kosher salt
    1 tablespoon sugar
    4 shallots (large (about 1/2 pound) thinly sliced crosswise into rings)


    Combine the vinegar, salt, sugar and 1/2 cup of sugar in a small saucepan. Simmer over medium heat until the sugar dissolves. Place the shallots in a pint jar an pour the hot vinegar mixture over them. Cover and refrigerate for 4+ hours before eating.

    Makes 1 c.
