Thelma's Green Tomato Pickles

Recipe Introduction
Super sweet and super crisp pickles. I haven't made these yet, but Jo did and she was very pleased with the results. These were the pickles that Mike’s step-grandmother, Thelma, made.
List of Ingredients
7 lbs green tomatoes, cut 1/4 ' thick (the smaller and firmer the tomato,
the better, slice thick to keep centers intact)
1 cup of lime
2 quarts apple cider vinegar
4 1/2 to 5 lbs. sugar
2 tbsp. pickling spice
1 tbsp. whole cloves (optional)
1 tbsp. celery seed
1 cinnamon stick (break it in half)
Recipe
Mix 1 c. lime to 1 gallon of water. Soak the tomato slices 24 hours (do not use aluminum ware). Rinse 3 times - don't run water over tomatoes. Handle gently to keep centers intact. Soak in fresh ice water for 3
hours. Drain.
Mix the cider vinegar and sugar together in large container. Pour over tomatoes. Put the pickling spice, cloves, celery seed and cinnamon stick in cheese cloth. Tie into ball. Put cheese cloth ball in a pot with tomatoes and vinegar/sugar mixture. Simmer 1 1/2 hours.
Pack in sterile hot jars. Simmer in hot water bath in canner 10 minutes.
Cool jars 12 hours. Check seals.
Yield 8 to 9 pints.
