Apple-Walnut Tossed Salad

Recipe Introduction
This was a wonderful, fresh tasting salad. It would be worth keeping a bag of cranberries in the freezer from the holidays in order to make this all year long. I only had romaine lettuce, so I just used that and it was very good, though I'm sure that the spring mix would be better. I did toss the apple slices in a little lemon juice to keep them from browning.
List of Ingredients
VINAIGRETTE:
1/4 c. red wine vinegar
1/4 c. fresh cranberries
2 T. honey
1 T. sugar
1 T. chopped red onion
1/4 t. salt
1/4 t. pepper
3/4 c. vegetable oil
SALAD:
2 pkg. (5 oz. each) spring mix salad greens
3 medium Red Delicious apples, thinly sliced
1 c. chopped walnuts, toasted
Recipe
VINAIGRETTE:
Combine the first 7 ingredients in a blender, cover and blend until pureed. While blending, gradually add oil in a steady stream. Blend completely.
SALAD:
Toss together salad greens, apples and walnuts. Serve w/ the vinaigrette.
Serves 8.
