Benihana Ginger Salad Dressing

Recipe Introduction
This is a wonderful dressing. It goes perfectly with any Asian food. Use on a green salad or hearts of palm. It even makes a wonderful marinade for chicken.
List of Ingredients
- 1/2 c. minced onion
- 1/2 c. peanut oil
- 1/3 c. rice vinegar
- 2 T. water
- 2 T. minced fresh ginger
- 2 T. minced celery
- 2 T. ketchup
- 4 t. soy sauce
- 2 t. sugar
- 2 t. lemon juice (or lime)
- 1/2 t. minced garlic
- 1/2 t. salt
- 1/4 t. pepper
Instructions
- Combine all ingredients in a blender. Blend on high for about 30 seconds. Chill until serving.
Final Comments
Let this sit a bit - the flavors develop very well!
Makes 1 3/4 cups.
