    Christmas Crunch Salad

    Really good make ahead salad. This saves well, too. We are still eating it after 3 days!


    List of Ingredients


    • 4 c. fresh broccoli florets (about 3/4 lb.)
    • 4 c. fresh cauliflowerets (about 3/4 lb.)
    • 1 med. red onion, minced fine
    • 2 c. grape tomatoes, halved
    • 1 c. mayo
    • 1/2 c. sour cream
    • 1 -2 T. sugar
    • 1 T. vinegar
    • salt and pepper to taste


    Instructions


    1. In a large salad bowl, combine vegetables. Whisk the mayo, sour cream, sugar and vinegar until smooth. Add salt and pepper to taste. Pour over the vegetables and toss to coat. Cover and chill for at least 2 hours.


    Final Comments


    I used low fat sour cream and Splenda. I also added some shredded cheddar cheese.

    Serves 16-18
