Daddy’s Chopped Salad

Daddy described this salad to me recently and I bugged him until he finally sent me the recipe. It is more a list of ingredients than an actual recipe and Daddy says that it can be changed up according to individual tastes – adding pepperoncini or other kinds of peppers, etc. But I wouldn’t serve it without the cheese and salami and I definitely wouldn’t serve it without his wonderful Creamy Parmesan Dressing. Only dress what you need, because the leftovers are good for a couple of days. I got the cheese and salami at the deli and had them cut me 1/2-inch slices so that I could cut into cubes easier. We liked this salad with the La Choy Rice noodles on top. Makes a nice change from croutons.NOTE: This really makes a HUGE amount of salad. I made it for a church dinner and it completely filled my largest (12.5-inch across) metal mixing bowl. If you make the entire recipe you'll need to DOUBLE the dressing recipe.
List of Ingredients
Head of iceberg lettuce, cut into 1/2-inch squares
3/4 lb. Swiss cheese, cut into 1/2-inch cubes
Large can black olives, sliced
15.5 oz. can Garbanzo beans
About 8 Roma tomatoes, seeded and diced
1/2 lb. Genoa salami, cut into 1/2-inch cubes
1 large English cucumber, seeded and cut into 1/2-inch dice
Daddy's Creamy Parmesan Dressing (see recipes)
Recipe
Mix the ingredients and toss with Daddy’s Creamy Parmesan Dressing.
Serves 20-30 people.
