David Ross' Apple, Pear & Parsnip Salad

I made this for the blog that I did at eGullet.org in April 2008. I saw David's version of it back in October 2007 and thought it was so beautiful. My blog focused on recipes that I hadn't tried yet, but that were at the top of my 'to try' file. This gorgeous salad was on that list. It is absolutely delicious and David actually made it at a more seasonal time of the year than I did. With the fall fruit, the parsnip, fragrant toasted walnuts, bleu cheese and a rich, sweet and fruity vinaigrette, it is the essence of fall! It is also a beautiful composed salad - make one on individual salad plates for each person.
List of Ingredients
Parsnip, julienned, blanched for 1 minute, then shocked in ice water
Apple, unpeeled, julienned
Pear, unpeeled, julienned (a crisp pear, not a soft one)
Walnuts, toasted
Bleu Cheese, crumbled
APPLE CIDER VINAIGRETTE:
Dijon
Walnut oil
Apple cider vinegar
Apple Cider
Sugar
Salt and pepper
Fresh thyme
Recipe
Use the vinaigrette ingredients to make a dressing to your taste. It should be slightly sweet. I started with 1/2 oil to 1/4 vinegar and 1/4 cider.
You will need just a handful of the mixed parsnip and fruit pieces for each salad. Arrange on each plate, drizzle with the vinaigrette and top with the bleu cheese and walnuts.
