    Festive Cranberry Salad

    Recipe Introduction


    This is really more like a dessert than a salad, but in keeping with the great Southern tradition of sweet 'salads', here you go. It really IS good and another make ahead!


    List of Ingredients


    • 1 - 14 oz. can sweetened condensed milk
    • 1/4 c. lemon juice
    • 1 - 20 oz. can crushed pineapple - drained
    • 1 - 16 oz. can whole berry cranberry sauce
    • 2 c. mini marshmellows
    • 1/2 c. chopped pecans
    • red food coloring (optional)
    • 1 - 8 oz. carton Cool Whip


    Instructions


    1. In a bowl, combine milk and lemon juice; mix well.
    2. Stir in the pineapple, cranberry sauce, marshmallows, pecans and food coloring.
    3. Fold in Cool Whip. Spoon into at 13 x 9 pan.
    4. Cover and freeze until firm, 4 hours or overnight. Cut into squares.
