    Fresh Spinach Salad

    Recipe Introduction


    Just a simple spinach salad with a great creamy, cheesy dressing. To make this a main dish salad, just grill some chicken breasts and slice and toss into the salad.


    List of Ingredients


    • 1 lb. fresh spinach - washed VERY well
    • 6 strips bacon
    • 1 T. bacon drippings
    • 1 t. prepared mustard
    • 1/2 t. sugar
    • 1 very small onion - grated
    • 1 c. mayonnaise
    • 1/4 c. vegetable oil
    • 1/4 c. cider vinegar
    • 1/4 c. Parmesan cheese
    • additional Parmesan cheese for topping


    Instructions


    1. Tear spinach into bite sized pieces. Place in large plastic bag and chill for several hours or overnight. Fry bacon; reserve 1 T. drippings. Crumble bacon and set aside. Add bacon drippings to all remaining ingredients, except cheese for topping, and mix well. Chill until ready to use.
    2. Place spinach in large bowl; toss very well with dressing, crumbled bacon and additional cheese.
