Recipe Introduction
Just a simple spinach salad with a great creamy, cheesy dressing. To make this a main dish salad, just grill some chicken breasts and slice and toss into the salad.
List of Ingredients
- 1 lb. fresh spinach - washed VERY well
- 6 strips bacon
- 1 T. bacon drippings
- 1 t. prepared mustard
- 1/2 t. sugar
- 1 very small onion - grated
- 1 c. mayonnaise
- 1/4 c. vegetable oil
- 1/4 c. cider vinegar
- 1/4 c. Parmesan cheese
- additional Parmesan cheese for topping
Instructions
- Tear spinach into bite sized pieces. Place in large plastic bag and chill for several hours or overnight. Fry bacon; reserve 1 T. drippings. Crumble bacon and set aside. Add bacon drippings to all remaining ingredients, except cheese for topping, and mix well. Chill until ready to use.
- Place spinach in large bowl; toss very well with dressing, crumbled bacon and additional cheese.
