Green Salad w/ Grapes & Strawberries
Source of Recipe
My own
Recipe Introduction
This was inspired by a similar salad from The Baker's Crust that I really love. They use a raspberry vinaigrette, but I thought that Daddy's paprika dressing would be good and it was a perfect pairing. The recipe calls for candied pecans, but feel free to use any other candied nut that you like. I made this for when my cousin Clete and his family visited us - there was a pecan allergy, so I did cashews and they were great. This is an easy salad, but it's a little more interesting than my usual. If you can find the Fresh Express Sierra Crisp blend, it is wonderful, but if not just use a mix of baby lettuces and herbs.
List of Ingredients
Baby spinach
Fresh Express Sierra Crisp Blend
Red grapes, cut in half
Strawberries, sliced
Candied pecans
Parmesan cheese, shaved
Daddy's Sweet & Sour Paprika dressing (see below)
Recipe
Place all ingredients through the pecans in a bowl. Toss with the dressing and top with the cheese.
DADDY'S SWEET & SOUR PAPRIKA DRESSING
1 c. vegetable oil
1/2 c. vinegar [I use red wine vinegar]
1/2 c. sugar [I use Splenda]
1 t. salt
1 t. celery seeds
1 t. dry mustard
1 t. paprika
1 t. grated onion [I use 2 t.]
Mix well and refrigerate. This will make more than you need.
