Judy’s Mandarin Tossed Salad

Recipe Introduction
A delicious and light salad that my MIL, Judy, makes. Instead of the dressing in the recipe she sometimes uses Girard’s Light Champagne or Private Selection Honey Poppyseed dressings. I think toasted ramen noodles or those canned rice noodles might be good with this.
List of Ingredients
SALAD:
1 small head cabbage or iceberg, grated or shredded
2 c. chopped celery
2 T. chopped fresh parsley
4 green onions with tops, minced
2-11 oz. cans mandarin oranges, drained
1/2 c. slivered almonds
1/4 c. butter
DRESSING:
1 t. salt
Pinch pepper
1/2 t. hot sauce
1/4 c. sugar
1/4 c. tarragon vinegar
1/2 c. salad oil
Recipe
SALAD:
Toast the almonds in the butter in a pan or oven set to 350F.
Combine the cabbage or lettuce with the celery, green onions, parsley and oranges in a bowl.
DRESSING:
Combine the ingredients and dress the salad, tossing well. Sprinkle with almonds and serve.
Serves 6-8.
