I got the idea for this recipe from Klary on the egullet dinner thread. Don't know if I made it exactly like her, but it was delicious. I wouldn't bother making this unless I had really good tomatoes - although in the winter, it might work with grape tomatoes.
List of Ingredients
1 large tomato
1 Belgian endive
3 T. pine nuts, toasted
4 T. goat cheese crumbled
Salt and pepper, to taste
Balsamic vinaigrette, to taste
Recipe
Cut the tomato into wedges. Cut the endive into 1” slices; rinse and dry. Toss the tomato, endive, pine nuts and goat cheese in a large bowl. Add the salt, pepper and vinaigrette to taste.
Serves 4.
