Mixed Herb Salad

Recipe Introduction
This is a wonderful salad. Perfect for folks that have an herb garden. I have actually made this salad with dried herbs - you have to adjust the amounts and you need to put the dried herbs in the dressing and make the dressing a couple of hours ahead of time to soften the herbs. It's still good, but not as good as fresh herbs!
List of Ingredients
- 1 small lettuce (butter, leaf, etc.) - torn into bite sized pieces
- 1 small chicory - torn into bite sized pieces
- 1/2 cucumber - chopped with the peel on
- 1 lemon - peeled and finely chopped
- 4 T. chopped chives
- 2 T. chopped mint
- 1 T. chopped tarragon
- 10 chopped sage leaves
- 4 T. olive oil
- 2 T. tarragon vinegar
- salt and pepper
Instructions
- Toss first 8 ingredients in a bowl.
- Beat together oil, vinegar, salt and pepper. Pour into salad and toss well.
