Momofuku Ramp Ranch Dressing

Mentions of this dressing started turning up at eGullet.org. People were talking about how addictive it was. Finally, Ann_T sent me the recipe. I could not find any pickled ramps, so I used the suggested substitutes. I basically pulverized the cocktail onions and green onions in my mini food processor. This is weirdly delicious. It is much better than the sum of its parts.
List of Ingredients
1 c. Kewpie mayo
1/4 c. buttermilk
1/2 c. pickled ramps or substitute 1/4 c. pickled pearl onions and 1/4 c. raw scallion greens - finely chopped
juice of 1/2 a lemon, or more to taste
Kosher salt and freshly ground black pepper
Recipe
Stir together the mayo, buttermilk, and pickled ramps (or pickled onions and scallion greens). Add the lemon juice, salt and pepper.
Taste and correct the seasoning paying special attention to the lemon and pepper. This will keep in the fridge for about a week.
Makes about 2 cups.
