This is an incredibly easy and delicious dressing. So many Russian dressings taste like 1000 Island without the pickles, but this has a tangy bite to it – not spicy-hot, but not sweet like 1000 Island can be. The original recipe has you making a paste of the onion with a mortar and pestle or knife; I think it’s easier just to grate it. I could have doubled the horseradish, but I love that stuff so YMMV. The dressing lasts 2 weeks in the refrigerator.
1 tablespoon grated onion
1 cup purchased or homemade mayonnaise
1/4 cup ketchup-style chili sauce or ketchup
4 teaspoons bottled horseradish, or to taste
1 teaspoon hot sauce, preferably Frank's Red Hot Sauce
1 teaspoon Worcestershire sauce
1/4 teaspoon sweet paprika
Fine sea salt
