Salad w/ Fall Fruit and Warm Brie

Recipe Introduction
This is one of our favorite salads, both at the restaurant and at home. It is very easy to make and everyone loves it. I usually do the Brie in the microwave.
List of Ingredients
- 4 wedges of Brie, 3 oz. each
- 3/4 c. sliced almonds, roasted
- 8 oz. mixed salad greens
- 1 apple, quartered, cored and sliced
- 1 pear, quartered, cored and sliced
- 1 pomegranate, seeds
- 1 c. red or green grapes, halved
- 4 oz. Red Grape Vinaigrette (see recipe)
Instructions
- Preheat oven to 300 degrees.
- Stud the brie with half of the almond slices (reserve the rest for garnish). Bake the cheese on an oven proof plate and melt slowly for 4 – 5 minutes.
- On four room temperature salad plates, divide equally the greens, top with the fruit and one ounce of Red Grape Vinaigrette.
- Remove the warm brie from the oven and with a spatula slide a wedge of cheese onto each plate. Garnish with the remaining almonds. Serve immediately.
