    Shaved Fennel and Orange Salad

    I’d had something similar to this at restaurants and thought that it would go well with the Roast Cod wrapped in Prosciutto that I was making. It was perfect – the acidity really cut the richness of the prosciutto.

    List of Ingredients




    1 clove minced garlic
    1 shallot, minced fine
    1 orange, zested and juiced
    2 small or 1 large fennel bulb – core removed and shaved
    3 oranges, segmented
    Garlic Expressions Vinaigrette or homemade
    Salt and pepper, to taste

    Recipe



    In a bowl whisk together the garlic, shallot, orange zest and juice. Add the fennel and orange segments and toss. Add the vinaigrette – enough to coat lightly and season to taste with salt and pepper. Refrigerate for half an hour.

    Serves 4.
