Recipe Introduction
My MIL, Jo, made this to bring to her 2009 family reunion and it was wonderful. I ate a LOT more of this salad than I should have. I think that it would be good to substitute sectioned tangerines for the canned mandarin oranges.
List of Ingredients
SALAD:
1/2 to 1 lb fresh spinach leaves
1/2 pkg. of mixed spring greens
1 pt. strawberries, sliced
2 fresh, ripe kiwis, peeled and sliced
1 can mandarin oranges, drained
1/4 cup toasted pecan halves or toasted sliced almonds
DRESSING:
2/3 cup sugar
1 tsp. paprika
1/4 tsp. salt
1 tsp. dry mustard
1 tsp celery seed or poppy seed
1/3 cup honey
1/3 cup vinegar
1 Tbsp. lemon juice
1 tsp. grated onion
1 cup salad oil
Recipe
SALAD:
Layer spinach and salad green in large bowl and top with the fruit. Drizzle with the dressing and top with nuts.
DRESSING:
Mix the sugar, paprika, salt, mustard, and celery or poppy seeds in a blender. Add the honey, vinegar, lemon juice and grated onion. Blend and slowly add the oil.
Jo's notes:
Dressing can be made several days ahead.
You could use a sugar substitute with the amount adjusted - I found that 2/3 c. made it too sweet.
