    Thai Broccoli Salad

    Recipe Introduction


    This is good with Satay and Thai Radish Salad. Mike, my husband liked it a lot.


    List of Ingredients


    • ¼ c. creamy peanut butter
    • 1 T. Splenda
    • 1 ½ T. hot water
    • 1 T. lime juice
    • 1 T. light soy sauce
    • 1 ½ t. dark sesame oil
    • ¼ t. red pepper flakes
    • 2 T. vegetable oil
    • 3 c. fresh broccoli florets
    • ½ c. chopped red bell pepper
    • ¼ c. sliced green onion
    • 1 clove garlic, crushed


    Instructions


    1. Combine peanut butter, Splenda, hot water, lime juice, soy sauce, sesame oil and red pepper flakes until well blended. Set aside.
    2. Heat vegetable oil in large skillet over medium high heat. Add broccoli, bell pepper, green onion and garlic. Stir fry 3-4 minutes until vegetables are tender crisp. Remove from heat and stir in peanut butter mixture.


    Final Comments


    Serve warm or at room temperature.

    Serves 4-6.
