Thai Broccoli Salad

This is good with Satay and Thai Radish Salad. Mike, my husband liked it a lot.
List of Ingredients
- ¼ c. creamy peanut butter
- 1 T. Splenda
- 1 ½ T. hot water
- 1 T. lime juice
- 1 T. light soy sauce
- 1 ½ t. dark sesame oil
- ¼ t. red pepper flakes
- 2 T. vegetable oil
- 3 c. fresh broccoli florets
- ½ c. chopped red bell pepper
- ¼ c. sliced green onion
- 1 clove garlic, crushed
Instructions
- Combine peanut butter, Splenda, hot water, lime juice, soy sauce, sesame oil and red pepper flakes until well blended. Set aside.
- Heat vegetable oil in large skillet over medium high heat. Add broccoli, bell pepper, green onion and garlic. Stir fry 3-4 minutes until vegetables are tender crisp. Remove from heat and stir in peanut butter mixture.
Final Comments
Serve warm or at room temperature.
Serves 4-6.
