Chicken Teriyaki Pita Pockets

Recipe Introduction
A yummy, easy sandwich. You can make everything ahead of time and just microwave the chicken just before serving.
List of Ingredients
- 2 lb. boneless chicken breast
- 1 c. Teriyaki mariniade w/ pineapple juice
- 1 T. butter or oil
- 1 medium onion, thinly sliced
- 1 c. yogurt
- ½ t. lemon pepper seasoning
- 6 whole pitas, halved
Instructions
- Slice chicken into strips. Marinate for 2 hours.
- Meanwhile, saute onion in butter or oil. Cool slightly and combine with yogurt, parsley and lemon pepper. Chill.
- Cook chicken in grill pan.
- To assemble sandwiches: Spread pitas with yogurt sauce. Stuff with chicken, lettuce, tomatoes and green onions.
Final Comments
Makes 6 whole pita sandwiches.
