    Recipe Introduction


    These are a great make ahead dish. They travel really well, too. An alternative filling is country ham, pineapple, chives, mayo and ground mustard - I did this and took them to a party. I made a pile of them and not one was left at the end!


    List of Ingredients


    • 1/4 c. cream cheese (they recommend nonfat - blah!)
    • 2 T. mayo (lowfat, if you like)
    • 2 t. minced onion
    • 1 t. white vinegar
    • 1/2 t. sugar
    • 1 c. minced ham
    • 1/2 c. grated carrot
    • 1/4 c. raisins
    • 8 slices white bread


    Instructions


    1. Combine first 5 ingredients and mix well. Add ham, carrot and raisins and stir well.
    2. Trim crusts of bread. Using a rolling pin, roll bread slices until flat. Spread ham mixture evenly over bread slices, spreading to edges. Roll up sandwiches, jellyroll fashion.
    3. If desired, wrap each sandwich in plastic wrap, twising ends; secure ends of plastic wrap with decorative ribbon.
    4. Store wrapped sandwiches in refrigerator up to 4 hours.
