Salmon-Dill Tea Sandwiches

Recipe Introduction
For Mother’s Day 2019, we took an afternoon tea-style lunch to Momma. One of the sandwiches was this. Simple and delicious. Remember that the better the salmon, the better the sandwich. No precise amounts – mostly this is to taste. I made these in the morning and served for lunch. Just line a plastic box with damp paper towels and store the sandwiches in that.
List of Ingredients
smoked salmon
cream cheese
dill, chopped
Trader Joe’s “Everything but the Bagel” seasoning (or your own Everything seasoning)
6 slices pumpernickel bread
Recipe
Spread one side of each piece of bread with a fairly thin layer of cream cheese. Top three slices of bread with as much salmon as you like (remembering that these are supposed to be rather dainty sandwiches) and sprinkle with a little dill and the Trader Joe’s seasoning. Top with the other 3 pieces of bread. Trim the crusts and cut into smaller shapes.
Makes about 9 tea sandwiches, depending on how you cut them.
