Mike grew up with Manwich, but I’d never had it until I left home as an adult. Now we love Sloppy Joes. The canned sauce is fine with us, but these are fantastic! A little extra work, but not a lot. Besh says that you can use any kind of leftover meat with these – I used leftover pot roast. The sambal mayo is too hot for me, but Mike loved it. The real home run is the amazingly easy and crisp onion rings. I’m doing them as a separate recipe, because I think that I’ll be doing them often as a topping for hot sandwiches, steaks, etc. They are shatteringly crisp and full of onion flavor, rather than coating flavor. We found that we preferred the sliders without the lettuce and tomato
List of Ingredients
SLOPPY JOE SAUCE:
1 teaspoon olive oil
1/2 onion, diced
1/2 cup pepper jelly
1/4 cup rice wine vinegar
2 tablespoons honey
1 tablespoon Creole mustard
1 tablespoon Worcestershire sauce
1 cup ketchup
Salt
Freshly ground black pepper
2 cups chopped cooked meat
ONION RINGS:
2 cups canola oil
2 red onions, sliced into VERY thin rings
Salt
1 cup flour
SAMBAL MAYONNAISE:
2 cups mayonnaise
3 piquillo peppers [I couldn’t find and used jarred roasted red peppers]
3 tablespoons sambal chili paste
Juice of 1 lemon
Salt
Freshly ground black pepper
SLIDERS:
16 slider buns, toasted
Bibb lettuce leaves
2 tomatoes, sliced

SLOPPY JOE SAUCE:
Heat the oil in a medium saucepan or sauté pan over medium-high heat. Add the onions and cook until browned. Add the pepper jelly, vinegar, honey, mustard, Worcestershire, catsup, salt and pepper, stirring constantly. Cook until warmed through. You can use this immediately or place it in the fridge for a few days. When ready to use, add the meat and warm through, covered – about 15 minutes. [I also cooked uncovered for a couple of minutes to get the sauce to the thickness that I wanted].
SAMBAL MAYONNAISE:
Combine all ingredients in a food processor and pulse until well combined.
ONION RINGS:
Heat the oil in a saucepan or frying pan to 350 degrees. Toss the onions with salt and let sit for a couple of minutes. Add the flour [you may not need an entire cup] and toss to coat. Fry in the oil. Fry only a few at a time until crisp and golden. Drain and season with a little salt.
SLIDERS:
Toast the buns. Spread with the sambal mayo and Sloppy Joe sauce. Top with lettuce, tomato and onion rings.
Serves 8.
