I try to have chicken gravy in the freezer for impromptu rotisserie chicken dinners. Sometimes, I don’t. The other day, I was making some store-bought chicken cutlets and mashed potatoes and needed gravy fast. So, I picked up a can of gravy from the store and threw together a few items and came up with a creditable chicken gravy that was actually quite tasty.
List of Ingredients
2 t. olive oil
1 shallot, minced
1/3 c. white wine
1 T. Better than Bouillon chicken
3/4 c. water
1 – 10.5 oz. can of chicken gravy
1 T. Bisto chicken granules (optional)
I also added a tiny drop of Gravy Master – just for color

Recipe
Heat olive oil in a small saucepan over medium heat. When it shimmers, add the shallot and cook, stirring, until it is soft. Add the wine and cook until the raw alcohol smell is gone. Add the Better than Bouillon and stir. Add the water and the gravy and lower the heat. Bring to a bare simmer. Let simmer until the flavor is where you want it. Add the Bisto and Gravy Master, if you like. S&P, as needed. You may not need salt at all.
