    Crabmeat Cream Sauce

    This is a wonderful pasta sauce. Or, you could add a bit more crabmeat and use it to stuff crepes.


    List of Ingredients


    • 2 oz. sweet butter
    • 1 T. chopped shallots
    • 4 oz. crabmeat
    • 2 oz. Cognac or sherry
    • 5 oz. tomato sauce
    • 10 oz. heavy cream
    • salt


    Instructions


    1. Using a 12" saute pan at medium heat. Add butter and shallots and saute until shallots are translucent. Add the crab and saute 2 minutes. Remove from heat and add Cognac. Put back on heat. When alcohol has cooked out, add tomato sauce and salt and cook until it reduces by half and becomes creamy.
