Crabmeat Cream Sauce

Recipe Introduction
This is a wonderful pasta sauce. Or, you could add a bit more crabmeat and use it to stuff crepes.
List of Ingredients
- 2 oz. sweet butter
- 1 T. chopped shallots
- 4 oz. crabmeat
- 2 oz. Cognac or sherry
- 5 oz. tomato sauce
- 10 oz. heavy cream
- salt
Instructions
- Using a 12" saute pan at medium heat. Add butter and shallots and saute until shallots are translucent. Add the crab and saute 2 minutes. Remove from heat and add Cognac. Put back on heat. When alcohol has cooked out, add tomato sauce and salt and cook until it reduces by half and becomes creamy.
