Recipe Introduction


This is a wonderful and flavorful sauce. You can use it on bread or pasta or even as a salad dressing. Garlic scapes can sometimes be found at farmer's markets. You only use the tender part of the scape - from just before the curve to the bulb part.


List of Ingredients




1/2 lb. garlic scapes, cut into 1 inch sections
1 c. olive oil
2 c. Parmesan cheese

Recipe



Put scapes and oil in blender and puree. Pour into a bowl and stir in the cheese by hand.
